yum!

For a couple years I've been using a Tuscan Herb infused EVOO.  It is so incredibly yummy!  I use it in everything from frying eggs, to roasting vegetables, to salad dressing, and of course for dipping bread.  I first saw (and purchased) it at the Flower and Patio Show from a company called The Olive Branch.   Some time ago I noticed a new store in our local town with a similar name and couldn't wait to go in.  Sad to say, it took me awhile, but when a coupon came in the mail I was all over it!  

Yesterday I got to go.  Aside from the stress of 3 children wanting to dip bread and taste all the oils and a baby who was getting fussy, I enjoyed my stop.  I was SO happy to see that it's the very same oils that I have been using!  They also have balsamic vinegars.  I have the traditional 18yr one.  It makes a great marinade or dressing.  It's so sweet and tasty!  

Well, I went in thinking I wanted to get a garlic infused oil and came out with something entirely different.  As I was perusing the white balsamic vinegars, one of them just reached out and grabbed my hand!  Before I could blink, there was a sample making its way to my mouth.  And that was the end. I was hooked!  Coconut White Balsamic Vinegar!  OH, the possibilities!  But it didn't stop there, oh no it didn't.  I asked the young man working there what he recommended to pair with it.  Before the words were completely out of his mouth, I knew I was a goner.  Persian Lime EVOO!  I nearly fainted with delight!  In less than 5 minutes we were loading ourselves in the van along with two bottles carefully packaged in a lovely olive green bag.

After arriving home, I got a package of salmon out of the freezer, thawed it, and poured on a mixture of equal parts Coconut White Balsamic Vinegar and Persian Lime EVOO.  Then placed it in the fridge to marinate.

Fast forward to this evening....the salmon was carefully placed on the grill and sprinkled with fresh ground sea salt and black pepper.  



I think it's safe to say that it was a hit!  



We paired it with brown Jasmine rice and oven roasted zucchini and sweet potatoes.



Then we enjoyed soft serve vanilla ice cream topped with fresh strawberries and blueberries!



Some of us even had a little fun with our dessert!  I won't say who :)





In summary, I highly recommend in investing in some of these incredible EVOO's.  Not only delicious and fun to cook with, but great for your health!  I can't wait to try this combo on chicken next!
