mix 'n chop

I got this handy dandy Pampered Chef utensil, called a mix 'n chop, from my mom for Christmas....


I kept forgetting to use it whenever I fried hamburger...until today! Now, I LOVE it! I was able to chop up the hamburger SO fine, which I love. It's an incredible kitchen tool. Go get yourself one!

This is the beginnings of the spaghetti meat sauce for next week's dinner club meal I'm making :0)

This past Friday, I most certainly did not do a happy dance in the kitchen with my children because their schoolwork was done for the year. Contrary to what they tell you, I did not make a fool of myself.

Neither did I get a cafe mocha from Tim Horton's TWO DAYS IN A ROW. I am doing exceptionally well with our 'Total Money Makeover' (Dave Ramsey) and the thought did not even enter my mind to go waste money on mocha's, let alone TimBits. I also did not consume only TimBits and a mocha for lunch yesterday. I am much more responsible than that and I am SO TOTALLY still only eating raw foods. (*I'm actually going to get back on that. I felt so good on it!*)

I did not almost go hysterical when I thought I'd lost my friend's young son, who was with me, at the YMCA. I totally kept my cool and did not get worried at all.

I did not miss any days of my Beth Moore Bible Study homework and did not have to play 'catch up'. It is always the first thing I get done every morning....at 5 a.m.

Oh
and I rarely ever over-commit. I have so much extra time on my hands I don't know what to do. And my house is so tidy because of it.

dinner

Steak and veggie kabobs, that's what we had the other night. And BOY did they taste good! The great part was, all I had to do was assemble the kabobs and have Eric grill them! The ingredients were brought to our door! I LOVE our dinner club*!!!





We also did asparagus on the grill, but gobbled it up so fast that we forgot to take a picture of it too!

Now, go forth and have kabobs for supper! You won't be sorry! (Oh, but I'M sorry for you if you're not in a dinner club*)





*Dinner Club:
Five friends....dinner (main and side dish) brought to your door Mon-Thurs. Every fifth week you get your cooking day 'off' because there's one friend who 'floats'.

Let me make this a little clearer....we meet and schedule 3 months worth of meals (planning only the main dish) so we can stagger what we are having and not get burnt out. We've even 'vetoed' a few recipes! My cooking day is Tuesday. I cook food for all five families and deliver it to their (the other four) doors, usually early afternoon. It's ready to be placed in the oven or assembled or grilled, whatever it needs. Basically prepare it as much as possible for them. Since there are five of us and we only do it four days per week, our 'floater' gives each of us a week off...our turn comes every 5 weeks. She will cook Mon. one week, Tues. the next and so on and then she takes a week off too. We've been doing this since October of last year and we're really fine tuning it to fit our needs. All the families are about the same size and we've pretty much got the portions figured out. (we started out w/ WAY too much food!) There is usually enough left over for Eric to take for lunch the next day...or we sometimes eat it all as in the case of these kabobs! We are really cracking down on using healthy ingredients, i.e. whole wheat, fresh fruits/veggies/salads, no hydrogenated oils, etc.

So, there ya have it....that's our dinner club! AND I LOVE IT!!!!!

And here is the one I made for the daughter of the above purse's new owner....I thought it turned out rather cute!



This one is spoken for, but I had to post a pic because I thought it turned out beautifully! The brown binding didn't match as well as I would have liked, but it turned out fine!
